  • 1 tsp turmeric

  • 1 tsp paprika

  • 1/4 tsp cayenne pepper

  • 1 can chickpeas, drained and rinsed

  • 1 can diced tomatoes

  3. Stuff each pepper half with the quinoa mixture, making sure to pack it in tightly.

  4. Place the stuffed peppers in a baking dish and cover with foil.

  5. Bake for 35-40 minutes or until the peppers are tender.

  6. Remove the foil and sprinkle vegan cheese on top of each pepper.

  7. Return the peppers to the oven and bake for an additional 5-7 minutes or until the cheese is melted and bubbly.
